Quinoa Tabouli

You will need:
1 cup of Quinoa (washed thoroughly)
2 cups of water
Salt

To Do:
Bring to a boil, cover and simmer 20 minutes until water is absorbed.

While the quinoa is cooking, get combining!
1/3 cup of peas
1 tomato diced
1/2 cucumber diced
3 scallion stalks chopped
1/2 teaspoon of thyme or marjoram
Lemon juice to taste
1/2 bunch of chopped parsley
1/2 bunch of chopped mint
